Beach Café Introduces New Menu

Carillon Point The Woodmark Hotel, Yacht Club & Spa, located on the shores of Lake Washington on Carillon Point 15 minutes east of Seattle, is pleased to announce new spring menus at its Beach Café restaurant. The new menus, developed by Chef de Cuisine Matthew Steffen, provide guests with fresh, local flavors and an updated take on classic favorites.

“I’m always looking for new ways to incorporate unexpected flavors in favorite dishes to keep our guests coming back for more,” said Chef de Cuisine Matthew Steffen. “The new menus offer a great mix of seafood dishes, vegetarian options and something for the meat-lovers, all with a fresh twist.”

Featuring new menus for breakfast, brunch, lunch and dinner, Beach Café offers a casual eatery for a bite on the waterfront. Guests are invited to start their day with new breakfast favorites, including Grilled Ham Benedict with two poached eggs on an English muffin with griddled ham and citrus hollandaise; Coconut Yogurt Parfait with pineapple-ginger drizzle, fresh tropical fruit and macadamia nut crunch; and Belgian-Style Waffle with citrus ricotta and huckleberry syrup. For brunch, Beach Café offers new options including Coconut Corn Soup with flavors of lemon, ginger, corn, crab and cilantro; Kalua Burger with beef, smoky pulled pork, lettuce, griddled Maui onion, American cheese, sweet pepper aioli with a choice of fries; and Citrus Poached Shrimp Salad with mixed greens, orange and chile vinaigrette, ceviche-style vegetables, pomegranate, crumbled queso fresco and shrimp.

Lunch and  dinner menus feature coastal and inland offerings including Callaloo Soup, a kale and coconut-based soup with pulled chicken and lemon with hints of nutmeg; Lump Crab Salad with fresh romaine and cucumber-avocado dressing, topped with grilled zucchini, red quinoa, artichoke hearts and cherry tomatoes; Spiced and Braised Lamb Tacos wrapped in flour and corn tortillas, covered with a spiced demi, roasted corn salsa with pickled onion, chimichurri sauce, queso fresco and chips and salsa; and Poached Mahi in Banana Leaf, poached in coconut broth, served over basil rice and topped with chilies, butternut squash and cucumbers.

Designed by Chef de Cuisine Matthew Steffen, the new Beach Café menu showcases his love of farm fresh flavors. Inspired by local Northwest farmers markets, Steffen has spent time in some of the most exclusive resorts in the Arizona area, including The Grill at the Arizona Biltmore Resort and Spa in Phoenix, Flying V Bar and Grill at Loews Ventana Canyon Resort in Tucson and the Grill at the Wigwam Golf Resort and Spa in Litchfield. His expertly crafted, farmers’ market-inspired cuisine earned him top honors in the “Desert Diamond Casino Chili Cook-off.”
